One Pan Cajun Lime Chicken

Easy, super creamy one pan chicken dish with the perfect balance of Cajun seasoning and lime

Ingredients

  • 600.000 g chicken thighs
  • 1.000 tbsp cajun seasoning
  • 1.000 tsp smoked paprika
  • 1.000 tsp onion granules
  • 1.000 tsp garlic granules
  • 1.000 tsp oregano
  • 1.000 tbsp extra virgin olive oil
  • 1.000 shallot
  • 1.000 sweet red pepper
  • 3.000 garlic cloves
  • 1.000 tsp smoked paprika
  • 1.000 tsp cajun seasoning
  • 200.000 ml chicken stock
  • 150.000 ml single cream
  • 100.000 g cherry tomatoes
  • 1.000 lime
  • 125.000 g basmati rice
  • 1.000 tbsp soured cream
  • 50.000 g tender stem broccoli

Instructions

  1. Season the 600g chicken thighs with cajun seasoning, smoked paprika, onion granules, garlic granules, and oregano
  2. Heat extra virgin olive oil in a large pan and cook the seasoned chicken thighs until browned
  3. Add finely chopped shallot and sweet red pepper to the pan, sauté until softened
  4. Add crushed garlic cloves and cook briefly
  5. Add smoked paprika and cajun seasoning to the sauce ingredients
  6. Pour in chicken stock and single cream, stirring to combine
  7. Add cherry tomatoes to the pan
  8. Squeeze the lime juice into the pan and add the lime halves
  9. Simmer until chicken is cooked through and sauce is creamy
  10. Serve over cooked basmati rice with a dollop of soured cream and tender stem broccoli on the side
