Ingredients

  • 2.000 red onions
  • 1.000 cup apple cider vinegar
  • 1.000 cup water
  • 2.000 tbsp sugar
  • 1.000 tbsp salt
  • 1.000 tsp black peppercorns
  • 1.000 tsp red pepper flakes
  • 2.000 garlic cloves
  • 1.000 bay leaf

Instructions

  1. Thinly slice red onions and pack them into a clean jar.
  2. In a saucepan, combine vinegar, water, sugar, salt, peppercorns, red pepper flakes, garlic, and bay leaf.
  3. Bring to a boil over medium heat, stirring until sugar and salt dissolve.
  4. Remove from heat and let cool for 5 minutes.
  5. Pour the warm brine over the onions, pressing down to submerge.
  6. Let cool to room temperature.
  7. Cover and refrigerate for at least 1 hour before serving.
