Tawa Style Chicken
A culinary masterpiece originating from the streets of India, this Tawa chicken features tender, marinated chicken seared on a traditional griddle to perfection. Each succulent bite delivers a delightful blend of smoky, charred notes intertwined with the rich essence of ginger and garlic, creating a symphony of flavors that dance on your palate.
Ingredients
- 4.500 tbsp ghee or vegetable oil
- 2.000 tsp cumin seeds
- 1.000 onion
- 2.000 inches ginger
- 6.000 garlic cloves
- 2.000 green chillies
- 4.000 tomatoes
- 2.000 tsp turmeric powder
- 3.000 tsp Kashmiri red chilli powder
- 3.000 tbsp coriander powder
- 2.000 tsp cumin powder
- 1.000 onion
- 1.000 green pepper
- 250.000 g BBQ or tandoori chicken tikka
- 1.000 tbsp Tawa spice mix
- 2.000 tsp Kasoori methi leaves
- salt
- warm water
- ginger
- fresh coriander leaves
- fresh tomato
- 2.000 tbsp coriander seeds
- 1.000 tbsp black peppercorns
- 2.000 tbsp fennel seeds
- 1.000 tbsp cumin seeds
Instructions
- Prepare the Tawa spice mix by toasting coriander seeds, black peppercorns, fennel seeds, and cumin seeds together, then crush them and set aside.
- Heat ghee or vegetable oil in a pan and add cumin seeds, allowing them to splutter.
- Add the finely chopped onion and sauté until golden brown.
- Add ginger, garlic, and green chillies, and cook until fragrant.
- Add the pureed tomatoes and cook until the oil separates from the mixture.
- Stir in turmeric powder, Kashmiri red chilli powder, coriander powder, and cumin powder, mixing well.
- Add the diced onion and green pepper, cooking until slightly softened.
- Add the BBQ or tandoori chicken tikka pieces to the pan.
- Sprinkle the Tawa spice mix and toasted Kasoori methi leaves over the chicken.
- Add warm water as needed to achieve desired consistency and cook until the chicken is heated through and the flavors are well combined.
- Season with salt to taste.
- Transfer to a tawa (griddle) or cast iron skillet and sear for a few minutes on high heat to achieve a charred, smoky finish.
- Garnish with fresh ginger julienne, fresh coriander leaves, and fresh tomato slices before serving.
